I love quinoa! In fact, I love it so much, I have it for lunch at least three times a week. It’s so versatile, tasty and especially healthy.
Today I made a warm salad I simply must share with you. So quick, so easy and SO good!
Quinoa & Kale Goodness
Serves 1
- 1/4 cup quinoa, rinsed
- 1/2 cup water
- 2 tsps olive oil
- 1 small red onion, sliced
- 1 clove of garlic, sliced
- 2 handfuls finely chopped kale
- fleur de sel
- freshly-grated pepper
- 3 sundried tomatoes, chopped
- 1 tbsp toasted pinenuts
- 1 tbsp sunflower seeds
- 1 small block of vegan cheddar, sliced (if desired)
Cook the quinoa in the water for 8 minutes, then leave to steam for 10. Heat the olive oil and gently sweat the onion and garlic for about a minute. Add in the kale, stir-fry for a minute or two, add in a few tablespoons of water, cover and leave to cook for 10 minutes. Add the quinoa, fleur de sel, pepper, sundried tomatoes, pinenuts and sunflower seeds and stir-fty for a minute or two. Serve in a bowl, stir in the vegan cheddar and finish off with a good grinding of pepper and perhaps a little drizzle of olive oil. Totally delicious!
