pearl barley saladHere’s the quick & healthy lunch I had today! I really enjoyed this tasty salad and I think you will too!

Pearl Barley and Black Bean Salad
Serves 2

  • 125 g pearl barley
  • 400 ml water
  •  tbsp red wine vinegar
  • 4 tbsps olive oil
  • ½ tsp smoked paprika powder
  • 1 tsp ground cumin
  • salt & pepper
  • 1 red onion, finely chopped
  • 1 large carrot, grated
  • 1 can black beans, drained and rinsed
  • chopped chives
  • 2 tomatoes, chopped

Put the pearl barley and the water in a pan, bring to a boil, reduce heat and allow to cook for 15 minutes. Drain. In a large bowl, whisk the vinegar, olive oil, smoked paprika powder, ground cumin and salt and pepper into a dressing. Add the chopped onion, grated carrot, black beans, chives, tomatoes and cooled pearl barley and combine. Serve!
