Monday, and a Tarte Flambée

Tarte FlambéeIt’s Monday again. Time to get back into the swing of things and earn an honest living! My weekend was pretty full, though I did manage to cook a proper meal at home yesterday complete with a nice bottle, candles and good music. By the way, speaking of music, go to Spotify asap and check out the soundtrack for A Bronx Tale, the 90s movie with Robert De Niro (damn I love him!). It has beautifully mellow tunes and some romantic oldies. Perfect music to unwind to.

One of the things I did this weekend was visit A La Ferme, the French restaurant in Amsterdam. In case you missed my review, you can read it here. The rest of the weekend was devoted to working on DUTCH. The first issue of 2015 is really looking brilliant and I can’t wait to see it in print.
I’m not going to make this post very long today, instead I am going to share one of my favorite recipes with you, my tarte flambée. This could very well be one of the quickest midweek dinners ever. Don’t worry about using ready-made pizza dough. It makes things easier, and who’s not all for that!

Tarte Flambée
Serves 6

  • 1 can of ready-made pizza dough
  • 200ml crème fraîche
  • 1 ½ tbsp mascarpone
  • freshly grated nutmeg
  • salt (preferably fleur de sel) and freshly-cracked pepper
  • 2 onions, halved and thinly sliced
  • 100g lardons
  • few sprigs of thyme, leaves plucked

Preheat the oven to 200°C and line a baking sheet with baking paper. Place the dough on the baking sheet and stretch it out as thinly as possible. Mix the crème fraîche, mascarpone, nutmeg, salt and pepper. Spread this evenly over the dough. Top with the onions, lardons and thyme. Pop in the oven for 20-25 and serve with an aromatic Riesling.
