marble bundt cakeAs I type this blog, the scent of butter and chocolate is wafting from the kitchen (which is still a mess) into the living room. I’ve baked a cake again. One that has kept me busy for the last few days. It’s a marble bundt cake, and it’s very good. Enjoy!

Marble Bundt Cake
Serve 10

  • 3 eggs
  • 170 g sugar
  • 1 1/2 tsp vanilla extract
  • 250 g all-purpose flour
  • 2 tsps baking powder
  • 110 g butter, melted
  • 2 tbsps cacao powder
    powdered sugar, to dust

Preheat the oven to 180°C. Butter and flour a bundt tin. Beat the eggs, sugar and vanilla extract until light and creamy. Sift in the flour and baking powder and carefully fold in. Fold in the melted butter. Pour 3/4 of the batter into the prepared tin. Mix the cacao into the remaining batter and pour over the top of the first layer. Use a skewer to swirl the mixture for a marbled effect. Bake the cake for 30 minutes and allow to cool on a rack for 10 minutes before dusting with powdered sugar and slicing.
