chocolate meringueLast Sunday I made fresh pastry cream for my tartelettes aux fraises and of course, was left with egg whites I could not stand to throw away. Instead I whipped them up with sugar and pure cacao powder and came up with this easy peasy little dessert: chocolate meringue nests with mascarpone and strawberries! Versatile and very delicious!

PS: Also great: use espresso powder (3/4 of a tbsp) instead of the cacao, top with whipped cream, pure melted chocolate and mocca beans!

Chocolate Meringue Nests with Mascarpone and Strawberries

Serves 4

  • 2 egg whites
  • 4 tbsps fine sugar
  • 1 tbsp pure cacao powder
  • 4 tbsps mascarpone
  • 8 ripe strawberries
  • honey (if desired)

Preheat oven to 150C and line an oven tray with baking paper. Whisk the egg whites with the sugar until almost stiff. Add the cacao powder and whisk again for another minute or so. Use two spoons to form 4 meringue nests on the baking sheet. Bake for an hour remembering to not open the door as they bake! Allow to cool and top with the mascarpone and the strawberries. Honey (just the slightest drizzle) is purely optional.
